Sear both sides, then finish cooking on indirect heat.
I followed a recipe for 3-2-1 baby back ribs. Smoked with rub for 3 hours; continued smoking while wrapped in foil for 2 hours; and finally sauced and smoked for 1 hour. It took a long time, but man was it worth it!!! Juicy, tender, finger licking ribs. They were devoured instantly.
