This hard sheep's cheese, aged over 1 year, is fragrant, is produced in Sardenia, Italy. Good for grating on pasta, salads and for using in risotto dishes. All natural, gluten free and hormone free.

I could not find kosher nongmo or organic parmesan cheese. This was suggested as a substitute. This is a hard cheese that grates like parmesan. It has a bold flavor like parmesan, but seems to melt better. Until someone decides to make some nongmo or organic parmesan, I will have to use this as a substitute.
