About this cut:
This cut is the rarest of the rare. There is only one per calf. This tender morsel takes to a marinade and searing to rare on the grill or cast iron. Can also be brined. Citrus, honey, sesame, rosemary, thyme, and garlic are our favorite flavors here.
Basic Cooking Technique
Grill, broil, or pan-sear quickly over high heat to rare. Tent with foil and let rest for 10-15 minutes before serving.
