About this cut:
This tender steak was "discovered" in the shoulder in 2013 and widely touted as "the newest steak." It's a thin cut similar to our Minute London Broil. On the leaner side, grill this quickly for a weeknight meal and serve one per person.
Basic Cooking Technique:
Pan-sear or grill quickly over high heat. Tent with foil and let rest for 10 minutes before slicing and serving.
This is my favorite cut because it is nice and lean. I make Korean BBQ out of it every couple of weeks. It is easy to slice and it is very good quality.
