Basic Cooking Technique:
Prepare like a London Broil. This cut is flavorful enough to stand up to a marinade, and can be cooked quickly over a high heat. Tent with foil and let rest for 10 minutes before slicing and serving.
We enjoyed these at a perfect medium. Sous vide at 128 for 20 hours then sear. Delicious!
