This tender steak is lean, but flavorful. Cut from the same piece as our kabobs, this is a great option for customers who prefer a lean, tender steak but aren't looking for something as fancy as filet mignon. Serve this in thin slices to a crowd and it's sure to please. Cut 1.25" thick.

Basic Cooking Technique:

Prepare like a London Broil. This cut is flavorful enough to stand up to a marinade, and can be cooked quickly over a high heat. Tent with foil and let rest for 10 minutes before slicing and serving.

    We marinate the shoulder steak and then grill to use in London broil salad every Shabbat lunch. Everyone loves it.

    Best for lean sous vide

    We enjoyed these at a perfect medium. Sous vide at 128 for 20 hours then sear. Delicious!
