Lamb riblets are cut from the breast, which is one of the tastiest and fattiest parts of the animal. About this cut

Lamb riblets are cut from the breast, which is one of the tastiest and fattiest parts of the animal. The fat is integral to the cut, and you don't need to trim it before cooking. Pieces are about 4" long and contain 3-4 rib bones.

Basic Cooking Technique

Braise in liquid, cool, then skim fat; or smoke or slowly roast to allow fat to render for an incredibly tender, succulent treat. Riblets will be meltingly tender after 5+ hours of cooking. This cut can also be smoked.

    Excellent, Expensive Garnish

    The lamb riblets are very fatty. This is wonderful if you want to collect lamb fat, but you do need to recognize the time and method required to properly render the fat. Once rendered, kashering means that the meat is well-salted. Together, the result is a wonderful garnish, not unlike gribenes, though more substantial.

    I love lamb, and I even liked that these were fatty because it gave them nice flavor, however the meat itself was almost too salty to eat. I didn't add any salt at all to my recipe, and still it was way too salty to really enjoy. It happened both times I got these riblets, curious if it was just a fluke both times or if they're always super salty. Note from Grow & Behold: Yes, this is a salty cut. You can soak them for 30 min in cold water ahead of cooking to remove some of the salt. We will update our product description. Thanks for bringing this to our attention!

    Riblets are OK but not the best

    My family and I love all kinds of lamb cuts, but the riblets were new to us and I was eager to try them. Not what I expected. There was more fat than expected and I would have cooked them differently had I known. Oh well, better luck next time. I know what to do and hopefully they will taste better next time.

    Only disappointing purchase from Grow and Behold. So fatty, so little meat. Not worth the expense or effort. Note from Grow & Behold: We'll reach out directly, Tziporah! This is a fatty cut, for sure but we want to address this for you.

    Yes, they are fatty, but that’s what Lamb riblets are...I prepped them with a simple rub of salt, pepper and olive oil then indirect heat on the grill at 325 for 90 minutes. Delicious!

    I love lamb riblets -- they are a perfect bite of fatty lamb goodness. The Grow and Behold riblets have amazing flavor and are so easy to make -- I have grilled, smoked, and even cooked these in the instant pot. Great covered in BBQ sauce or enjoyed with just a little bit of seasoning.

    Much fattier than I thought. Probably won’t reorder although the meat was good From Grow and Behold- Sorry you didn't enjoy Sandra! The riblets are a very fatty cut- they are best braised a day before so that you can skim the fat the next day.

How Many Pieces Will I Receive?

Our frozen meats are packaged in vacuum-sealed packages. Most packages contain one piece (ie, one Brisket). Some packages will contain two pieces (ie, Lamb Chops). Packages of smaller items, such as Chicken Wings or Pepper Steak, will contain multiple pieces.

For red meat items and multi-pack poultry items, vacuum-sealed packages may be packed in a cardboard box. If there is an option to choose how many packages you'd like in the box, you'll make that selection under "Customize Your Order." Then you'll choose your preferred weight (that is, the combined weight of all the the packages in that box.) If only one choice is showing in a green box, you do not need to make any selection.

Example: Lamb Chops

Let's say you're ordering Lamb Chops and you select the following:


You've chosen: 2 packages, ~1.1 lb, and the price shows $39.99.

You’ll receive 1 box, with 2 packages of lamb chops inside.

Each package will contain 2 lamb chops. You’ll have 4 lamb chops in total. We always try to pack similar-sized items, but you may find that some chops are slightly larger and some are slightly smaller.

How Much Does It Weigh?

We use weight ranges in order to keep our fulfillment system practical and manageable for items with variable weights (for example steaks. Packages of deli meats which are not sold by weight range as we can pack them by exact weight). The ranges are as small as practically possible to minimize the variation between the Selected Weight and the actual weght you receive. Because of this, if the price per pound is shown as "price/lb*", the *" indicates that it is an estimate for comparison purposes only, since the price associated with the selected weight is the price for all items within that weight range.

This chart shows the potential weight variance for selected weights on our site:

For example: 

  • An item with a Selected Weight of ~1.5 lb could weigh as much as 1.75 lb or as little as 1.25 lb
  • An item with a Selected Weight of ~5 lb  could weigh as much as 5.5 lb or as little as 4.5 lb 

We keep the ranges as small as practically possible to minimize the variation you might receive. Sometimes you will receive a bit more than the listed weight, and sometimes a bit less. Our customers find that on average they receive what they are expecting. But if you find that your actual weights in an order are all below the listed average, please snap a picture of the weight labels and send it over to us, and we'll be happy to make things right.
