Picanha is a lean cut with a nice fat-cap that is traditionally grilled over hardwood charcoal to rare or medium rare. Score the fat in a cross-hatch pattern, season with your favorite rub, or just salt and pepper, and grill. You can also cut it across the narrow end in 2" wide strips, and skewer for grilling. Since authentic Picanha is cut from the round (hindquarter), we fabricate our "Mock Picanha" from the shoulder-eye of our pastured Black Angus beef, which is a a similarly lean muscle with a nice fat cap. Do NOT cook past 130F, or this cut will be tough. Our ranchers graze their cattle on pasture in the mid-Atlantic region of the United States, where they enjoy a carefully balanced diet of grass, forage crops and hay that never includes hormones or growth promoting antibiotics. You'll immediately notice the incredible flavor in the meat, and the fat on this cut, from our pasture-raised beef. At Grow & Behold, every cut is trimmed to perfection, carefully packaged, frozen at peak quality and delivered right to your door. *Price per pound is an estimate for comparison purposes only. Basic Cooking Technique:

Grill whole to 130F, let rest, slice against the grain; or slice into three or four sections, thread on a skewer, and grill over indirect heat, flipping every 5-8 minutes, until internal temp reaches 130F.

Or sous Vide at 130F for 6+hours, then sear in a hot pan or on the grill on all sides before serving.

Recipe

Sous-Vide Mock Picanha (includes instructions for non-sous-vide cooking as well!)

    Mock picanha

These used to be my favorite, not sure what happened to the last batch. I think the butcher forgot how to cut this cut. There's practically no fat cap whatsoever :( Very disappointed! Note from Grow & Behold: Thanks for the feedback! We are so sorry that you got an order like this! It must have slipped through the quality control process. We will reach out to you directly to correct the situation.

    YUMMM!

Sliced into 4 pieces, skewered, grilled, and the fat cap still provided tons of delish flavor. Can't wait to do this one again!

This is always a hit - I remove some of the fat before cooking it. It's delicious.

    Mock Picanha

Posted by Mike S. on Apr 28th 2022

My family has had the mock picanha, a very reasonably priced cut of meat, several times. I bbq the non fat side on a high flame to sear it and then leave it in the bbq off the flame to cook slowly. When it's done, medium rare for us, I slice it thin and smother it with burnt onions - the meat is tender and has lots of flavour. Moreover, the leftovers make great sandwiches during the week.

    Perfectly delicious

Best steak I ever cooked with very little prep needed. Cooked this in my oven despite the fact that it traditionally is cooked over charcoal. I pan seared first, scoring the fat cap. Finished up in oven on roast setting at 300 degrees. Turned the meet every few minutes until it was cooked to medium rare. Must rest this cut for at least 15 minutes. For spices- all I used was salt and pepper. It was tender and extremely flavorful. Will buy again and can only imagine how good it will be when cooked over charcoal!

    MOCK PICANHA sous vide

Posted by EJ on Jul 12th 2020

I scored the meat, drizzled some EVOO on, lightly covered with montreal steak seasoning then into the sous vide bath for about 6.5 hours at 130 before searing on all sides in a pan on the stove top. Perfection.

How Many Pieces Will I Receive?

Our frozen meats are packaged in vacuum-sealed packages. Most packages contain one piece (ie, one Brisket). Some packages will contain two pieces (ie, Lamb Chops). Packages of smaller items, such as Chicken Wings or Pepper Steak, will contain multiple pieces.

For red meat items and multi-pack poultry items, vacuum-sealed packages may be packed in a cardboard box. If there is an option to choose how many packages you'd like in the box, you'll make that selection under "Customize Your Order." Then you'll choose your preferred weight (that is, the combined weight of all the the packages in that box.) If only one choice is showing in a green box, you do not need to make any selection.

Example: Lamb Chops

Let's say you're ordering Lamb Chops and you select the following:

You've chosen: 2 packages, ~1.1 lb, and the price shows $39.99.

You’ll receive 1 box, with 2 packages of lamb chops inside.

Each package will contain 2 lamb chops. You’ll have 4 lamb chops in total. We always try to pack similar-sized items, but you may find that some chops are slightly larger and some are slightly smaller.

How Much Does It Weigh?

We use weight ranges in order to keep our fulfillment system practical and manageable for items with variable weights (for example steaks. Packages of deli meats which are not sold by weight range as we can pack them by exact weight). The ranges are as small as practically possible to minimize the variation between the Selected Weight and the actual weght you receive. Because of this, if the price per pound is shown as "price/lb*", the *" indicates that it is an estimate for comparison purposes only, since the price associated with the selected weight is the price for all items within that weight range.

This chart shows the potential weight variance for selected weights on our site:

Selected WeightPotential Weight Variance
under ~0.95 lb +/- 0.15 lb
~1 lb to ~3.9 lb +/- 0.25 lb
~4 lb to ~10 lb +/- 0.5 lb
over ~10 lb +/- 1 lb

For example:

  • An item with a Selected Weight of ~1.5 lb could weigh as much as 1.75 lb or as little as 1.25 lb
  • An item with a Selected Weight of ~5 lb  could weigh as much as 5.5 lb or as little as 4.5 lb

We keep the ranges as small as practically possible to minimize the variation you might receive. Sometimes you will receive a bit more than the listed weight, and sometimes a bit less. Our customers find that on average they receive what they are expecting. But if you find that your actual weights in an order are all below the listed average, please snap a picture of the weight labels and send it over to us, and we'll be happy to make things right.
