This roast is very similar to brisket in texture and cooking method and smaller than a whole brisket. More marbled than a first cut brisket, but leaner than second cut and a slightly beefier flavor.

    Great but sous vide advice

    Do not use G&B's packaging for sous vide even if they say you can. We ordered 2 roasts. Both packages leaked, one slightly and one quite a lot. In spite of what looked to be a disaster, we repacked the roast after 24 hrs. of an intended 48 hr. cooking. And it turned out delicious but would have been "beefier" in a true sous vide. I don't think this is the fault of G&B. A puncture could have happened at any point including in our kitchen. Note that there are two sections of this cut, one more marbled (or fattier) than the other. Note from Grow & Behold: Thank you for the feedback! We are so sorry this happened. While our packaging is safe for the sous vide, we do always recommend checking for leaks - preferably by defrosting in the fridge on a plate before dropping in your sous vide machine.

    An excellent cut of meat: long, extremely thin, well-marbled, and very versatile. After tiring of braises, I rolled it around a caramelized mushroom-onion filling, tied it, covered in foil, and roasted to 135 -- perfection. Inspired by the review suggesting treating it like a steak, I seasoned with salt, pepper, and garlic powder, put it flat in a vacuum bag, and cooked it sous vide at 137 for 36 hours, then seared in cast iron (grill or torch would have been even better). Incredible taste and texture -- soft and juicy with just the right amount of chew. Highly recommended.

    This is always delicious. I like the leaness of it. I use canned tomatoes, wine, chicken soup (unsalted) onion soup mix as well as other seasonings. It always turns out delicious. And not fatty.

    This is a great cut. Lots of people make it like brisket but it’s also a great steak done on the grill. Treat it just like a ribeye (of which it’s a component) and cut slices across the grain. It’s my family’s favorite steak. You could even marinate it like skirt steak but that’s not necessary due to how flavorful it is alone.

    I prepared this cut of meat as I would a brisket. I passed it off as brisket, too. It was delicious and my husband kept saying how great the brisket turned out!

    This meaty top of the rib lives somewhere between a first and second cut brisket, and I braised it with the Honey&Red Wine recipe, and it blew everyone away! CANNOT WAIT TO DO IT AGAIN!

How Many Pieces Will I Receive?

Our frozen meats are packaged in vacuum-sealed packages. Most packages contain one piece (ie, one Brisket). Some packages will contain two pieces (ie, Lamb Chops). Packages of smaller items, such as Chicken Wings or Pepper Steak, will contain multiple pieces.

For red meat items and multi-pack poultry items, vacuum-sealed packages may be packed in a cardboard box. If there is an option to choose how many packages you'd like in the box, you'll make that selection under "Customize Your Order." Then you'll choose your preferred weight (that is, the combined weight of all the the packages in that box.) If only one choice is showing in a green box, you do not need to make any selection.

Example: Lamb Chops

Let's say you're ordering Lamb Chops and you select the following:

You've chosen: 2 packages, ~1.1 lb, and the price shows $39.99.

You’ll receive 1 box, with 2 packages of lamb chops inside.

Each package will contain 2 lamb chops. You’ll have 4 lamb chops in total. We always try to pack similar-sized items, but you may find that some chops are slightly larger and some are slightly smaller.

How Much Does It Weigh?

We use weight ranges in order to keep our fulfillment system practical and manageable for items with variable weights (for example steaks. Packages of deli meats which are not sold by weight range as we can pack them by exact weight). The ranges are as small as practically possible to minimize the variation between the Selected Weight and the actual weght you receive. Because of this, if the price per pound is shown as "price/lb*", the *" indicates that it is an estimate for comparison purposes only, since the price associated with the selected weight is the price for all items within that weight range.

This chart shows the potential weight variance for selected weights on our site:

For example: 

  • An item with a Selected Weight of ~1.5 lb could weigh as much as 1.75 lb or as little as 1.25 lb
  • An item with a Selected Weight of ~5 lb  could weigh as much as 5.5 lb or as little as 4.5 lb 

We keep the ranges as small as practically possible to minimize the variation you might receive. Sometimes you will receive a bit more than the listed weight, and sometimes a bit less. Our customers find that on average they receive what they are expecting. But if you find that your actual weights in an order are all below the listed average, please snap a picture of the weight labels and send it over to us, and we'll be happy to make things right.
