About this cut:
This smaller roast is great for a small crowd of 4-6. It cooks and tastes just like a brisket, only smaller. Brisket is beautifully netted to help it cook evenly. Remove the netting before serving.
Basic Cooking Technique:
Roast at medium or high heat, or braise low and slow with liquid.
Marinated in mole, the seared and braised for 3-4 hours. Beautifully wrapped, stayed together in the pot after all that time, and gave off delicious juices basting veg underneath. A phenomenal meal for 6 of us at a great price.
