Meaty and flavorful, and larger than our lamb chops, these versatile shoulder chops make a hearty meal. They love a marinade and lend themselves well to several different cooking methods. Shoulder chops have a larger meat to fat ratio, so if lamb chops from the rib have too much fat for your taste, shoulder chops are a better choice.

These are the loveliest lamb chops that I have ever eaten. I love rack of lamb too but as steaks these are great.
