These 2" thick medallions are hand selected and cut from the eye of the rib, the most tender kosher cut on the steer. Petite and elegant, and meant to be served one per guest, these filets easily steal the show at a multi-course dinner.

Basic Cooking Technique:
Sear over high heat on a grill, then cook to rare or medium rare over indirect heat. Tent with foil and let rest for 10 minutes before slicing and serving.
