A classy cut that you might have enjoyed at a recent wedding, the airline breast includes a skin-on chicken breast filet, with the first joint of the wing (the drummette part) attached. Serve these breasts individually for a delicious and beautiful special occasion meal.
Raised in small batches by a network of dedicated Amish and Mennonite growers, our poultry are moved to fresh pasture daily where they roam and forage freely. They are fed exclusively GMO-free grain, never any hormones, antibiotics or animal by-products, which means you get to enjoy delicious, moist, tender boneless, skinless chicken - just they way it should be.
- Grill: Start the pieces over direct heat to crisp the skin. Don’t move them for at least 5-6 minutes, until the skin releases easily. Flip and cook the other side. Once seared, move the chicken to the cooler section of your grill, cover, and let them continue to cook gently for 10-15 minutes more, or until the bone moves freely from the meat when wiggled gently, or the piece is tender to the touch.
- Oven/Roast: Braise or roast at 325F until tender.
