About this cut:
Our most tender and elegant lamb roast will dazzle your guests when it comes to the table, and delight even more when it first hits the tongue. The rack is cut from the rib and includes 8 connected chops. Allow 2 chops per person. This roast is NOT Frenched. Note: If ordering multiple racks, try to order the same size to keep portions at similar sizes (ie, the chops cut from a 2lb Rack of Lamb will be much smaller than those from a 3.5 Rack of Lamb.)
Basic Cooking Technique
Sear and roast to rare or medium rare. Tent with foil and let rest 10 minutes before serving.
