About this cut:
A small rack of four delicous and tender ribs. This cut is perfect for the spice rub of your choosing, cooked on the grill or in a hot, heavy skillet. For maximum tenderness, braise or steam then finish on the grill. For medium tenderness sear on hot grill, then move to indirect heat for 20-30 minutes.
Basic Cooking Technique
Sear on the grill over high heat, then finish using indirect heat. Can also be braised and seared on the grill to finish.
We love braising these low and slow with onions and apricots. One of the easiest meat dishes I've made and comes out amazing.
Absolutely delicious! Simple prep is best, roasting at 425 with seasoning is superb.
