Bring your steaks to room temperature and pat dry before searing.
- Grill: Sear over high heat on a grill, then finish using indirect heat. Tent with foil and let rest for 10 minutes before slicing and serving.
- Stovetop: Use your electric immersion circulator to cook to desired doneness. Pat dry, then sear over high heat, 1-2 min per side, to develop crust.
