ABOUT OUR PASTURED DUCK

 
What is Pastured Duck?

Our pastured ducks are carefully raised by our network of poultry farmers in the mid-Atlantic, where they graze freely and have ample access to fresh water for bathing. Their diet includes GMO-free grain, plus grasses and legumes foraged from the pasture. They are never fed any hormones, antibiotics or animal by-products.

 

Does Pastured Duck Taste Different?

Our pastured duck is the freshest, tastiest kosher duck around. Customers consistently rave about the flavor and quality of this duck, which is rich and meaty, never greasy. The fact that our ducks are raised on pasture, without hormones or antibiotics, means you're getting a product that is not only delicious, but healthy and sustainable as well.

How Do I Cook Pastured Duck?

Duck is a rich meat with incredible flavor in its fat. It's best to remove that fat while cooking and save it for another use (slathering on potatoes, etc.). To do this, prick the skin of the duck with a push pin, or score it lightly with a sharp knife, taking care not to cut all the way through. For breasts, sear in a pan and drain off the fat as it accumulates; pour through cheesecloth into a jar and save; For whole birds, roast in a deep casserole and pour off the fat every 30 minutes or so. Duck pairs nicely with sweet fruity flavors like apricot, lavender, andChinese 5-spice powder.

 

Are There Feathers on Kosher Duck?

In order for kosher poultry to be kosher, it can’t be plucked using scalding water as is common in the non-kosher market. Kosher birds are plucked using a cold-water method. (Incidentally, this method also ensures the birds are never ‘cooked’ or exposed to high temperatures, which is great for tenderness, flavor and, above all, cleanliness and health concerns). While our processing team does a great job, it’s not uncommon for kosher birds to have some pinfeathers. Please don’t worry. A few feathers aren’t going to ruin your bird.
