This lean yet tender roast comes from the same cut as the Silver Tip Roast. Our Shoulder Roast is trimmed of all excess fat and "silver skin." Cooking Technique: Braise low and slow, or dry roast to rare. Tent with foil and let rest for 10-15 minutes before slicing and serving. For deli-style Roast Beef, cool before slicing thin.

This is a good roast for making deli-style cold roast beef. Cool the roast, then put in the fridge overnight. You'll be able to cut very thin slices once the roast is cold.
- Oven/Roast: Braise low and slow until tender. Dry roast to rare. Tent with foil and let rest for 10-15 minutes before slicing and serving.
- Sousvide: Use your electric immersion circulator to cook to desired doneness. Pat dry, then sear over high heat, 1-2 min per side, to develop crust.
